Chanukah starts tonight! So I made a thread with Latkes in the title!

What kind of savage puts ketchup on latkes? That's terrible.

My ex boyfriend. One year I threw the ketchup off the balcony. Because I'm very serious about my latkes and not always so emotionally stable.

Hey, I just made some really nice applesauce the other day. Latkes might be on the agenda soon (fun fact: I fry mine in a mixture of butter and bacon fat).
Note: I also made some really nice ketchup recently, but I would never, ever pair it with latkes.

I'm making latkes tomorrow for a chanukah potluck thing!
Can you guys give me recipes for the World's Greatest Latkes? The one I have sort of just makes The World's Most Adequate Latkes.

4 lg. all-purpose potatoes, pared
2 eggs
1 sm. onion, grated
1/3 c. all-purpose flour
1 tsp. salt
dash of pepper (or more if you like it)
Vegetable oil for frying
Shred potatoes onto a towel; squeeze out as much moisture as possible. If you're shredding potatoes ahead of time (not too far ahead of time) then shred them into a bowl of water before squeezing out ALL the moisture. Squeezing out the moisture can be tough so do it a bit at a time. Place in large bowl; stir in eggs, onion, flour (or matzoh meal if you have it) and salt.
In large skillet, heat oil over medium heat. Drop potato mixture by scant 1/2 cupfuls into skillet; flatten each to about 4 inch round. Cook until golden brown, about 4 minutes. Turn, cook on other side until golden, about 4 minutes. Put on paper towels. If you have to, keep them warm on an uncovered cookie sheet in the oven before serving with applesauce and sour cream on the side. Boosh.

Also, use a lot of oil or else it's hard to get the latkes crispy on the outside. My sister-in-law made this mistake last year. We have since torn the cloth.

Yeah they're usually fried in around 2 inches of hot oil. It's good if they float. Also, if you do the shredded ones, don't smoosh them down too much when you put them in the pan. Just kind of put a small mound and press on the middle a tiny bit. Then let them go til they start to look brown on one side. I think it's easiest to flip them with two forks, but you sometimes get splashed with oil. Recreational hazzard.

Tonight my grandma served us sufganiot imported from Israel. In what possible way does that sound like a good thing?
