I think with some knob twisting from a real-deal studio wiz will turn these tracks from good to GREAT. the recordings are really tinny, but that's to be expected with demo stuff. Leave the EQing and compression and all that science of recording stuff to the folks on the other side of the glass. Focus now on the songwriting and getting as tight as possible.
definitely shop around before handing your hard-earned cash over to the first dude with a Pro-Tools setup in his garage. Listen to stuff they've recorded before and see if you like their handiwork. sometimes, you can luck out and find someone who is apprenticing and needs bands to practice on, but that should always be for free/ beer money. If you are paying $100/ hr, they better be a damn professional.
