Is there a program that can extract sheet music from a song?

The free Notepad does it from midi files... though I'm not sure if it's possible with any other type of sound file.

Wav to Midi (or notation) is damn near impossible to do with current software (I should know, I have tried most of them). YES, it can be done, but the results will vary greatly. A solo instrument with a distinguishable tone (say a flute) can be translated pretty easily (with decent accuracy), but a full ensemble mixed down cannot be separated, instrument by instrument by any software I know of.

this has been a kind of 'holy grail' amongst computer musicians for some time now. If you find anything that can pull it off, send me a link.

It also seems kind of analogous to the situation with decompiling computer programs.  It is basically impossible to turn a binary computer program back into source code in any useful way; even when you can decompile, the result is not something which is organized in a useful way or easily editable by puny humans.

There's a program called Digital Music Mentor that can do guitar and bass tab and chords. However, it's not always accurate. There's also a plug-in for Winamp called Easy Chords (I think) that does the same thing for free but the accuracy is even worse with that one.

I wish there were a script for ITunes that accessed Ultimate Guitar Archive. There's one that queries OLGA but OLGA is pretty much dead.

Nope, not impossible but DMM can be frustrating and you obviously don't get lyrics either. But, it's great for all those songs that you can't find chords for online even if the accuracy isn't always the best.
