Great topic (for me) and this could have been my entry point to calling but I wasn't listening live.
cholola: delicious
sriracha: the best (it's like the ketchup of the hot sauce world)
and a recipe:
Boil 4 big tomatoes and throw in an onion that has been sliced and seared in oil. Add a mound of Mexican oregano, garlic and about 6-8 large dried chilies (also adding a dried habanero if that is your desire). Boil all of this for around 20 minutes and drain some of the water (but save it just in case you need to add liquid). then blend or use a stick blender on it. Add salt and you just kind of made ranchero sauce. I eat it on everything.

I put sriracha on everything. COCK SAUCE.
-
I enjoy the spicy cock sauce as well as Frank's Red Hot. Best on eggs and chicken.
-
yucateco (it's a green one) on guacamole cannot be beat.
-
Breakfast today and almost every day:

Green Tabasco is underrated. It is less spicy but has better flavor than regular tabasco.
I once ate so much Dave's Insanity Sauce that I turned bright red, started sweating profusely, and then threw up. Yeah, just trying to trick yourself by swallowing quickly and avoiding tongue contact doesn't work.
In Georgia they think barbecue sauce is spicy.

I agree. And regular Tobasco is overrated.
-
I am always a little suspicious of the ingredients in some hot sauces cause they make my tummy burn. When I want hot in my food, I always rely on fresh Thai chilis-

When I need to rrrrrrachet it up a notch, I go for Habanero peppers-

For a good time, try sautéing habaneros.
-
Regular Tabasco should be seen as an ingredient (for heat and tang) and not a condiment. It's much better once it's cooked into something.
I once had some sort of "5 pepper mash" hot sauce that had papaya juice in it. I bought it in a store in New Orleans back in 2002 and I have yet to find it again. It was the best tasting hot sauce I'd ever had. The flavor of it was just amazing!

The red is great too.
The topic felt tailor made for me because I have no idea from where my hot sauce urge came. But I, quite literally, a couple weeks back, asked myself, "What the hell have I been missing?"
I'll pick up Bob Weir's hot sauce for next week. I'm fairly certain the hot sauce depot down the street (I'm not kidding, there really is one right down the street) has it.

Large Marge's is a Philly cheesesteak place a few towns over that I go to because they have seitan cheesesteaks and also make their own pretzels.
They also sell this hot sauce, which I link to solely for its name and as an example of great web design:

Seeing the craftsmanship of that html just goes to show that they don't make them like they used to. css and jquery are just crutches.
I really enjoy seeing a good late '90's style website.
(At first i didn't have my speakers on and then I crossed my fingers, cranked it up and was totally rewarded!)

IMO, I believe that the cheaper the hot sauce is, the more I like it. Not because of efficiency, but something about the trashy, vinegary heat does it for me. I don't think Tabasco is overrated as much as it is overpriced. It's ludicrous what they charge for that stuff, although I've read some recipes & the process is pretty involved, in their defense.

In college, my friend Vid used to make this sauce called Vidian and roughly 5 or 6 of us would gather and eat it once a week over pasta with huge loaves of bread, blocks of cheese, and about two gallons of milk.

The stuff was so hot, we'd literally sweat like we were running track, BUT it was also EXTREMELY delicious. Every week, I'd start craving it again, and Vid would usually call the next day and say "Dinner's at my place tonight!" I've tried to find a hotter sauce, and so far Vidian is the hottest thing I've EVER eaten. If I know Vid, these new sauces taste even better... and might possibly be even hotter.

For me it's:
El Yucatero (green or red) on Mexican
Cholula on breakfasty food, also Pizza
Sriracha on everything else
-
tobasco/cholula works well on morning eggs.
cock sauce brings it home on any asian tofu dish or pho.
as for my own personal cooking habits, i tend to cook the peppers, blend it up, then leave whatever im cooking to marinate in it before actually cooking (more like simmering) it- the longer you cook it, the hotter it gets.

Tapatio is decent, but not spectacular.

New Mexico green chile goes well on everything.

What's great about Tapatio is that it's so all-purpose. And it's perfect for a pussy like me - not too strong but with a good kick, and tasty too.

AFK deep-fried some fresh sliced jalapenos last night in a batter made with flour, paprika, crushed red pepper, buttermilk, and this powdered cajun flavoring somebody gave us for Christmas. They were amazingly delicious.

Just reading that makes my nose go sniffly.

On a recommendation, I picked up Widow 'No Survivors' hot sauce. Christ Almightee! http://www.hotsauceworld.com/widhotsaucno.html Hot hot hot hot hot but great flavor. But hot hot hot hot hot. They didn't have the Bob Weir stuff. But hey.

the jalepeno hot sauce at trader joe's is quite tasty.

ive thrown this hot sauce with cilantro into their hummus (instead of getting the jalapeno cilantro hummus itself) and its taste delicious, almost better than the original.

I have yet to try using "Frostbite" creatively. It's allegedly added heat without added flavor. At first I thought "why the heck would one want that?" But then I realized that there's a lot of potential for creating really unique heated flavors.

Also, i missed this post originally so I posted my own regarding the mention of Bob Weir's Hotsauce on the show..
